Easy Lasagne

1.5 pound (675g) lean ground beef
2 cloves garlic (minced, crushed or grated)
1 medium onion, diced
1 bell pepper, seeds removed and diced
1 -6 ounce tin tomato paste
1 -20 ounce tin diced or crushed tomatoes
1 teaspoon each salt, pepper, oregano, basil
1 package lasagne noodles (oven ready are best if you are lazy like myself)
1 -12 ounce carton cottage cheese
8 ounces grated mozzarella
grated parmesan to taste
Brown the beef and onion over medium heat in a large pan to which a couple of teaspoons of oil have been added. After a couple of minutes, add the pepper and garlic. Cook for a couple of minutes, then drain off any fat, and add the tomatoes. Cover and simmer for about 15-20 minutes. While it cooks, heat the oven to 350F, and cook the pasta if not using oven ready lasagne.

Using a 9 x 13 baking dish, layer meat sauce, noodles, cottage cheese. Then repeat, using meat sauce, noodles and grated cheese. Then add more meat sauce and sprinkle cheese on top. You can add grated parmesan to the final layer. Bake at 350F for 20-30 minutes. Let sit for about 5 minutes or so before serving. Nice with garlic bread and a Caesar salad.

Experimenting with Stuffed Peppers

Peppers are something I have always eaten, but never been too excited about. I like them in a stir-fry, or salad or on a pizza…and that’s about it. Lately, I’ve been eating more of them, and the price has become very reasonable,  so I decided to try stuffed peppers for dinner. Then I wound up messing around with another variation.

Hamburger Soup- easy ground beef dinner

Hamburger soup may sound a bit strange, but it is very tasty and can be assembled in a crockpot/slow cooker in the morning before heading off to work, and is excellent with a nice loaf of bread. If you have a bread maker, set a loaf to complete when you get home and supper is ready.

Put the following in a slow cooker:

one large diced onion
1 pound lean ground beef (if not lean, brown and strain off excess fat)
1 cup diced carrot
1 cup diced potato
1 cup shredded cabbage
1 can sliced mushrooms, drained
1 can diced tomatoes
1 can tomato soup
1 clove garlic, minced
1 stalk celery, chopped
1 teaspoon each, salt and pepper
1 tablespoon paprika
Stir it all about until thoroughly mixed. If there is an ingredient you do not like, leave it out. You can substitute something else that you do like (peppers, beans, corn…).

Set on low, and go to work. It can cook from 8-12 hours. Makes a very hearty soup.

Easy Cabbage Rolls Casserole

In one way, this is a quick meal…that is, if you plan ahead. I make this easy cabbage rolls casserole the night before, and cook them when I get home. You can also leave them in a slow cooker, or on a timer. Preparation takes me about 30-45 minutes.

Quick Meals With Ground Beef- spaghetti sauce

DSCF2488I love pasta, and my husband makes THE best spaghetti sauce I have ever tasted.  It makes quite a large batch, and takes a while to prepare, so he makes it on the weekend, and I put it up in smaller portions and freeze them for quick ground beef meals during the week. Making food in quantity and freezing it, or prepping batches of vegetables for use during the week, can save you a lot of time when you are in a rush.

Quick Steak

One of the quickest meals in a hurry is steak, especially if you have a barbeque.

We usually use top sirloin, but occasionally we get a small prime rib roast and take steaks off of it:)

Steak is best if brought to room temperature before grilling on a hot grill (as hot as it goes). Season with salt and fresh pepper. Cooking time is determined by the thickness of the steak and the temperature of the grill.

Quick meals with ground beef – shepherd’s pie

Shepherd’s pie is a relatively quick meal made with ground beef or lamb (if you want to be traditional, or you happen to have leftover roast lamb). It is easy to assemble, and takes about half an hour to cook.

Quick meals with ground beef- lasagne

On a cold, yucky day when it’s snowing, or the rain is chucking it down like no-one’s business, I like comfort food.  Roast, stew, lasagne, cabbage rolls, shepherd’s pie…all the old standbys.

Looking at the contents of my freezer, today seems like a day that calls for a quick meal with ground beef. It would have been even quicker if I had some frozen pasta sauce on hand.  Oh, well…

Quick meals with ground beef

Ground beef is one the most versatile dinner meats I can think of…(well, that, and chicken breasts. )

FAST

If you can’t think of anything else, you can always brown it with some onion and garlic, and make gravy by straining off the fat, then adding beef broth and thickening it with flour or cornstarch. Serve with mashed potatoes and vegetables and you have dinner in less than 30 minutes.
