Main Dish Salad Dinner

When you are in a hurry, do not overlook salad. It can be a main dish. Thinly sliced chicken breast can be coated with egg or milk, and rolled in crushed almonds, or breadcrumbs mixed with grated parmesan and oregano, salt and pepper and baked for about 20 minutes in a 400F oven. It can then be served over a salad for a very hearty meal.

Easy Chicken Noodle Recipe aka Chicken Lo Mein

This is an easy chicken noodle recipe. It’s my version of chicken lo mein. It’s fairly quick to make, especially if you have 2 woks.

2 chicken breasts, cubed
1 tablespoon honey
1 tablespoon sesame oil
2 tablespoons soy sauce
2 tsp grated fresh ginger
2 teaspoons grated or crushed garlic
Combine the above in a bowl and set aside. if the honey is a bit thick, warm it for a few seconds, and it will be easier to work with.

Quick Easy Chicken Soup

I remember nights when I would finish work, and dash into the grocery store and stare at the meat until something sort of leaped out and said “buy me”. Then I’d rack my brains trying to think of what to do with it.  When my mind would go:

hamburger= chili, meatloaf, shepherd’s pie, tortillas

chicken breast= fried chicken, chicken burger, souvlaki, soup

Soup! Aha! Grab a couple of chicken breast halves, a couple cans of chicken broth, I have onions and vegetables at home, grab some nice bread if I don’t want to make biscuits….okay, I’m set.

Flattened Chicken Recipe

Flattened chicken, aka spatchcocked chicken is a great way to cook a chicken in a hurry. Using a cleaver, or kitchen shears, cut the backbone apart, and spread the chicken on a cutting board.Press down on the breast to flatten it, or cut the breastbone, whichever is easiest. The chicken in the picture is not huge (about 2.5 pounds) and took about 45 minutes to cook on the barbecue.

Quick Chicken Drumsticks with fried rice

There are several quick chicken drumstick recipes, so I thought I would make one of them for supper tonight. Drumsticks are dark meat, so they are a little more
moist and flavourful than the breast. They are also, usually, quite a bit less expensive than other parts of a chicken…so meals made with them tend to be more economical.
