When my daughter was a teenager, it was hard to get her to eat anything remotely healthy. I came with these chocolate chip banana muffins in the hopes of getting her to eat them because of the chocolate and hoping she wouldn’t notice the flaxseed. She loved them. Boston Cream Pie made with Wacky Cake

Boston Cream Pie made with Wacky Cake

I was  playing around with Wacky Cake again the other day, and decided to make it as a plain cake. I then split it and filled it with custard, and topped it with chocolate icing. Not a true Boston Cream Pie, but a fairly decent imitation, and very easy to make.

The recipe for the custard is here. I only made a half of the recipe.

Chocolate frosting:

1/3 cup cocoa
1 cup icing sugar
enough cream to make it smooth (1-2 tablespoons)

 

Rice Wraps with peanut dipping sauce

I’ve never made these before, but for some reason today I really fancied the idea of rice wraps with peanut dipping sauce. I nipped off to the grocery store for wrappers, bean sprouts and a lime. I had everything else.
