Linguine with White Clam Sauce

This is definitely a fast meal. I can have it on the table in about 20 minutes. My husband prefers tomato based sauces for pasta, and I prefer cream based ones. When I developed lactose intolerance, I had to give it up (under protest), but not too long ago, I discovered a good brand of lactose-free milk and cream, and I am back to enjoying my cream-based dinners.

Oatmeal Raisin Muffin Recipe

I really like muffins…as breakfast with a piece of fruit, as a snack or even as dessert. They are extremely simple to make, and homemade ones are much healthier and lower in calories than those giant store bought ones. Making them at home means portion control, and control of the ingredients means you are in charge of their caloric impact.

Quick and Easy Pizza

Homemade pizza is great, and very easy to make. You can make your own dough (by hand, using a mixer or using a bread machine), or, these days, you can buy a pre-made pizza base. If you are in a hurry, and have pre-made dough or a pizza base, you can make pizza in less than half an hour.

Anzac Biscuits


DSCF2546My husband and I went to Australia for our 25th wedding anniversary. We loved it there…such an interesting place, with friendly people and good food. It is where we first encountered Tim-Tams, lamingtons, a vast array of meat pies and Anzac Biscuits. Love at first taste. One of the best things about Anzac biscuits is that they are very easy to make.

Easy Chicken Noodle Recipe aka Chicken Lo Mein

This is an easy chicken noodle recipe. It’s my version of chicken lo mein. It’s fairly quick to make, especially if you have 2 woks.

2 chicken breasts, cubed
1 tablespoon honey
1 tablespoon sesame oil
2 tablespoons soy sauce
2 tsp grated fresh ginger
2 teaspoons grated or crushed garlic
Combine the above in a bowl and set aside. if the honey is a bit thick, warm it for a few seconds, and it will be easier to work with.

Quick Easy Chicken Soup

I remember nights when I would finish work, and dash into the grocery store and stare at the meat until something sort of leaped out and said “buy me”. Then I’d rack my brains trying to think of what to do with it.  When my mind would go:

hamburger= chili, meatloaf, shepherd’s pie, tortillas

chicken breast= fried chicken, chicken burger, souvlaki, soup

Soup! Aha! Grab a couple of chicken breast halves, a couple cans of chicken broth, I have onions and vegetables at home, grab some nice bread if I don’t want to make biscuits….okay, I’m set.
